I like to think I’m a domestic goddess in the making. Since moving in with my boyfriend about 18 months ago, I have become incredibly house proud (although he would still say I’m messy – I’m not gonna clean 24/7!) and like cooking ‘proper’ meals from scratch. However, recipes still terrify me. I can easily be put off by something that includes an ingredient I’ve never heard of, or that asks me to refrigerate something for half an hour before baking it. If any of you feel the same way, ie want to be a bit more adventurous in the kitchen without being intimidated, I’ll be using these ‘tried and tested’ posts to share recipes with you that even someone like me can’t cock up! So, if you fancy trying something different tonight, give this a go.
Pinterest is a wonderful invention – I couldn’t cook without it! I found this one from Rock Recipes and it was rather yummy. Even if I did cheat a bit and serve it with super noodles (without the flavouring)!

Serves 2
Slice four medium sized chicken breasts through the middle
Sift together 8 tablespoons of plain flour, 2 teaspoons of salt, 2 teaspoons of black pepper, 1 teaspoon of thyme, 1 teaspoon of sage and 1 tablespoon of paprika (I didn’t have the other ingredients to hand but it tasted fine)
Roll your chicken slices in the mixture, ensuring it is completely covered
Fry in a griddle pan on a medium heat for about five minutes on each side
In a medium saucepan, add 2 cloves of minced garlic to a couple of tablespoons of oil
Cook over a medium heat until the garlic is soft but not brown
Add 8 tablespoons of honey and 1 teaspoon of black pepper
Simmer for 5-10 minutes
Once your chicken has cooked, add the sauce and serve
